Spinach Crepe rolls

Ingredients for the crepe-
Half pound spinach
1.5 cups milk
1 cup flour
3 eggs
Oil for cooking
Freshly ground pepper

Stuffing ingredients-
½  cup cooked rice
½ cup cooked vegetables like carrots, radishes, peas and potatoes
½ cup diced chicken, turkey or minced beef cooked with salt and pepper.

Crepe - Chop the spinach and put it into the blender along with the milk and eggs. Blend for a minute, then add the flour, salt and pepper and blend well. Spread oil over a pan and pour a little of the mixture into it. Cook each side well and remove. Continue till all the crepes are done.

Stuffing - Mix the rice, veggies and meat together. Spoon a little of the stuffing into each crepe. Roll the crepes around the stuffing and hold in place with toothpicks. Heat in the oven before serving.
